Here are some of my favorite recipes for delicious, wholesome meals. I'm all about reducing my intake of processed foods and opting for homemade dishes instead. Those little tweaks in your eating routine can work wonders, not only making you feel better but also adding a touch of quality to your life.
Perfect for peak summer tomatoes
If you grow a garden and harvested an abundance of tomatoes, you simply must give this incredible tomato soup a try. You can also use fresh, ripe tomatoes from the farmers' market. It's by far the most delicious tomato soup I've ever tasted, and the best part is, it's easy to prepare. Begin with ripe, fresh tomatoes, add some onion, whole bulbs of garlic, a couple of sweet peppers, and a handful of fragrant herbs. Drizzle with olive oil and roast everything together in the oven, and then, with the help of an immersion blender, transform it into a velvety delight. The simplicity of it all makes it the ultimate comfort food. Serve with a grilled cheese sandwich to really elevate your meal.

Ingredients
3-4 pounds of ripe tomatoes
1 onion, quartered
2 heads of garlic, cut in half
2-3 small sweet peppers (optional)
1/3 cup extra virgin olive oil
Large handful of fresh basil
Sprig of thyme or oregano
2 cups of chicken or vegetable broth
Salt and Pepper to taste
Grated parmesan cheese (optional)

Directions
Preheat oven to 450 degrees. Drizzle a little olive oil in dutch oven
Place tomatoes, peppers, onion, garlic, basil and thyme in the dutch oven and drizzle with olive oil. Roast in oven for about 25 minutes or until tomatoes are bursting open. Remove from oven. Remove garlic bulbs and squeeze the garlic from them back into the pot.
Use an immersion blender and blend until smooth. Add broth and blend until creamy. Garnish with fresh basil and grated parmesan cheese.
